Amaranth used to be the basic food of the old Inca’s (the seed contains proportionately more proteins than our well known grains...). In the garden it is a big, huge, sometimes really imposing plant with large, decorative upright tails. Moreover it yields impressive, richly coloured, material for flower arrangements.
