The Amaranthus cruentus , or green amaranth, are impressive plants with large, upright green tails that flower from July to October. They also provide impressive material for flower arrangements, in rich colours: 'Green Thumb' is the green counterpart of 'Pygmy Torch', a low form (40-60 cm). Originally, Amaranth was the staple food of the ancient Incas (the seed contains proportionally more proteins than our known cereals...). Its unique texture adds drama to the garden. Ideal for borders, cut flowers and dried bouquets. It is also edible; the seeds and leaves are used in the kitchen.
